Meal 1: Cherry Tomato and Sweet Corn Salad by Smitten Kitchen
Ingredients:
  • 2 ears fresh corn
  • 2 tablespoons olive oil

  • 4 tablespoons apple cider vinegar
  • 1 teaspoon kosher salt
  • Freshly ground black pepper
  • 1 clove garlic, minced
  • 4 scallions, thinly sliced (white and green)
  • 2 cups cherry tomatoes, halved or quartered
  • 1 Bell pepper, diced
  • 1 jalapeño, seeds removed, finely chopped
  • 1 cup finely-chopped fresh herbs such as parsley, mint, basil, chives, or a mix thereof
Directions:
Cook the corn your favorite way; I use the grill. Heat your grill to a high heat. Shuck the cobs, removing any stringy bits, and lightly oil the cobs. Place directly on the grill and cook until charred spots form, rotating the cobs as needed. This can take about 5 to 10 minutes, depending on how robust your grill is. Set the cobs aside to cool slightly while you make the dressing.
Pour olive oil, cider vinegar, kosher salt, many grinds of black pepper, and minced garlic in a medium-large bowl and whisk to combine. When corn is cool enough to handle (with a towel, if needed), cut the kernels from the cob and add to the dressing in the bowl. Scatter tomatoes, jalapeño, scallions, and herbs on top of the corn in layers, but I don’t bother mixing it at this point. I like the corn to marinate and gently pickle in the dressing. Do ahead: Corn salad can be made 1 hour in advance. If you’d like to make it even earlier, I’d leave the herbs off until right before serving so they don’t discolor.
Pair with your preferred protein (For example: grilled chicken or steak)

Meal 2: Grilled Zucchini Ribbons with Pesto and White Beans by Smitten Kitchen

Ingredients:
  • 1 1/4 to 1 1/2 pounds zucchini, thinner longer ones are ideal here
  • Olive oil
  • Coarse or kosher salt
  • Freshly ground black pepper
  • 1 lemon
  • 1 3/4 cups (from 1 15-ounce can) small-to-medium-sized white beans, drained (I used – Goya’s Great Northern beans)
  • 1 garlic clove, peeled
  • A 2-ounce bundle of basil (this is the small clamshell size at most groceries)
  • 1 to 2 tablespoons white wine vinegar
  • Coarsely grated parmesan, to taste
Directions:
Prepare the zucchini: Trim ends and cut zucchini the long way into 1/4-inch strips. I use a mandoline for this, but a knife works too. Spread out strips on a large tray and brush lightly with olive oil and season well with salt and pepper.
On a grill with full heat or a grill pan, grill zucchini in a single layer until grill marks appear underneath, then flip over and repeat the same on the other side. Transfer zucchini back to platter and squeeze lemon juice over it.
Meanwhile, in a food processor or blender, combine basil and garlic with a few good pinches of salt and a few grinds of black pepper until chopped. Drizzle in olive oil until it blends smoothly; you’ll want about 4, sometimes 5, tablespoons. Add 1 tablespoon vinegar and blend until well-mixed; taste and add more vinegar, up to 1 more tablespoon, to taste. Season to taste.
Combine beans with about 2/3 of the dressing in a small bowl. In a larger bowl or serving platter, pour half of dressed beans in the bottom. Arrange grilled zucchini on top, twisting and turning it so that it looks extra ribbony. Spoon remaining beans in the spaces. Drizzle the remaining dressing over the platter, to taste. Finish with parmesan.

Meal 3: Buffalo Beets
Conard and I (Kelsey) recently visited the Wildflower Cafe in Mason, OH and devoured their “Buffalo beet wings”. I could have eaten three more plates of them, but this is my best guess to recreate it.
Ingredients:
  • 1 pound of beets, cut into even 1 inch chunks
  • Big drizzle of olive oil
  • 1 tbs cornstarch
  • Salt
  • ¼ cup of Buffalo sauce
  • Feta cheese
  • Cilantro, finely chopped
Directions:
  1. Preheat oven to 425 degrees and place shelf in upper third of oven.
  2. Drizzle diced beets with olive oil and toss with cornstarch and a generous amount of salt.
  3. Spread on a cookie sheet, ensuring there is space between each beet to allow moisture to escape. Roast for 20-25 minutes, until crispy.
  4. Toss with buffalo sauce. Place confidently on a plate and sprinkle crumbled feta and cilantro on the top.
  5. If it doesn’t turn out, Plan B is to go to the Wildflower Cafe for dinner tonight!

Meal 1: Burst Tomato Galette with Corn and Zucchini by Smitten Kitchen

Pastry:
  • 1 1/4 cups (160 grams) all-purpose flour
  • 1/4 teaspoon fine sea or table salt
  • 8 tablespoons (4 ounces or 115 grams) cold unsalted butter, diced
  • 1/4 cup (60 grams) plain yogurt or sour cream
  • 2 teaspoons (10 ml) lemon juice
  • 1/4 cup (60 ml) cold water
Filling:
  • 1 tablespoon (15 ml) olive oil
  • Kosher salt
  • 3 cups (about 450 grams) cherry or grape tomatoes
  • 1 ear corn, cut from the cob (about 1 cup)
  • 1 small (8 ounces or 225 grams) zucchini or summer squash, sliced or diced
  • 1 bundle (3 to 4 ounces or 85 to 115 grams) scallions, thinly sliced
  • Freshly ground black pepper
  • 1/2 cup (2 ounces or 55 grams) grated parmesan
Glaze:
  • 1 egg yolk beaten with 1 teaspoon water

Make dough: Whisk the flour and salt together in a large bowl. Sprinkle bits of butter over dough and using a pastry blender or your fingertips, work it into the flour until the mixture resembles coarse meal, with the biggest pieces of butter the size of tiny peas. Add sour cream, lemon juice and water and to the butter-flour mixture and combine with a flexible spatula or spoon until large clumps form. Pat the lumps into a ball. Wrap with plastic or a large piece of parchment paper and refrigerate for 1 to 2 hours, until firm, or up to 4 days, if planning ahead.
Make filling: Get down the sauté pan with the lid. If you don’t have one, any large lid will do. Add olive oil, tomatoes, 1 teaspoon salt and a pinch of red pepper flakes to your sauté pan then cover and heat over high heat. Roll the tomatoes around from time to time so that they’ll cook evenly. In a few minutes, you’ll hear some putts and pops as the tomatoes burst a little. When most have, remove lid, turn heat down to medium and add zucchini chunks. Sauté for two minutes, until they begin to soften. Add corn and cook one minute. Add scallions, just stirring them in, then turn off heat. Adjust seasonings — adding freshly ground black pepper and more salt, as needed. Transfer mixture to a large plate and spread it out, so that it will cool faster. You want it cooled to at least lukewarm before assembling the galette.
Assemble galette: Heat oven to 400 degrees. On a floured counter, roll the dough out into a 12-inch round — no need for it to be perfectly round. Transfer to a parchment-lined baking sheet; I like to fold my dough gently, without creasing, in quarters then unfold it onto the baking pan. Sprinkle tomato-zucchini-corn mixture with half of parmesan and spoon the mixture into the center of the dough, leaving a 2-inch border. If any liquid has puddled on the plate, try to leave it there as you spoon. Sprinkle with almost all of remaining parmesan, leaving a pinch or two behind for the crust. Fold the border over the filling, pleating the edge to make it fit. The center will be open. Brush crust with egg yolk glaze. Sprinkle glaze with last pinches of parmesan.
Bake the galette: For 30 to 40 minutes, or until puffed and golden brown. Remove from the oven and let stand for 5 minutes, then slide the galette onto a serving plate. Cut into wedges and serve hot, warm or at room temperature.

Meal 1: Eggplant with Yogurt and Tomato Relish adapted from Smitten Kitchen
Ingredients:
  • 3 tablespoons olive oil, divided
  • 1 1/4 to 1 1/2 pounds eggplant; I prefer the long, thin variety here but any will do
  • Salt and freshly ground black pepper
  • 1/2 cup (75 grams) dried couscous (optional)
  • 1 garlic clove
  • 1/4 cup packed basil leaves
  • 1 tomato
  • 2 teaspoons red wine vinegar, plus more to taste
  • Red pepper flakes
  • 1/2 cup plain yogurt
Directions
Heat oven to 425 degrees. Trim eggplants and cut in half lengthwise; season cut sides with salt and pepper. Coat a large roasting pan with olive oil (1 to 2 tablespoons). Arrange eggplants cut side down; sprinkle with more salt and pepper. Roast for 25 minutes on the first side, or until brown underneath then flip and roast 5 to 10 minutes more. Remove from oven and let cool slightly.

Meanwhile, make couscous, if using it. Bring 3/4 cup water and a few pinches of salt to a simmer then pour it over dried couscous in a bowl. Cover with a lid or foil and let side for 5 minutes to absorb, then fluff with a fork.

Make tomato relish by pulsing garlic and basil in a blender or food processor until finely chopped, then add tomatoes and pulse until they’re well chopped. Add 1 tablespoon olive oil, vinegar, salt, freshly ground black pepper or a pinch or two of red pepper flakes and pulse to combine. No food process or blender? Not a problem at all; just mince the garlic and basil well and finely chop the tomatoes; stir this together with the remaining ingredients.

Both methods: taste for seasoning. We like this extra sharp and almost always add 1 more teaspoon of vinegar and more salt. The longer it sits, the more potent it gets.

To assemble, schmear each eggplant half with a little yogurt. If you’re using couscous, sprinkle a little on top. Spoon tomato relish over and serve the rest of all the above on the side.

Meal 2: Roasted Beet & Carrot Salad
Ingredients:
  • 2 beets, peeled and cubed
  • 3 carrots, sliced
  • ½ onion, sliced
  • 2 cloves garlic
  • Fresh basil
  • Olive oil
  • Salt, pepper, and balsamic vinegar (optional)
Directions:
  1. Toss beets, carrots, onion, and garlic with olive oil, salt, and pepper.
  2. Roast at 400°F (205°C) for 35–45 minutes.
  3. Top with chopped basil and a splash of balsamic vinegar if you like.
  4. Serve warm or chilled. Goes great on a bed of salad greens and your favorite cheese.

Meal 3: Cantaloupe Salsa adapted from Gourmet
Makes about 2 cups of salsa
Ingredients:
  • 2 cups diced (1/4 inch) cantaloupe (from a 2 1/4-lb piece)
  • 1/4 cup diced (1/4 inch) onion
  • 2 tablespoons chopped fresh basil
  • 1 (2-inch-long) fresh hot red or green chile (skip the seeds if you want to dim the heat), mince
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon salt
Directions:
Mix everything and eat immediately.
This would be great over grilled fish or chicken. It is equally good with tortilla chips.

  1. Roasted Romanesco & Summer Squash with Parmesan Panko

Ingredients
  • 2 heads Romanesco 2 to 2½ pounds
  • 2 Summer squash
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon crushed red pepper flakes
  • ½ cup grated Parmesan cheese
  • ½ cup panko bread crumbs
Instructions
  1. Preheat oven to 400°F.
  2. Trim the Romanesco into bite-sized florets. Slice summer squash into ¼ inch half moons. Add romanesco and squash to bowl.
  3. Add the olive oil and toss to coat. Add the garlic, salt, pepper, red pepper flakes, Parmesan cheese and bread crumbs. Toss everything together.
  4. Spread on a rimmed baking sheet.
  5. Roast for 15 minutes then stir and roast for 15 to 20 minutes longer.
Serve on top of a side salad of lettuce mix and salad dressing of choice

2. Samin Nosrat’s Bright Cabbage Slaw

Ingredients
  • 1 small head of cabbage
  • 1 small red onion
  • 2 jalapeños
  • 1 small bunch cilantro
  • Red wine vinegar
  • 1 lime
  • 1 lemon
  • Salt
  • Good olive oil
Instructions
  1. Halve the head of cabbage, remove the core from each half with a V-shaped incision, and slice thinly. Place in a big salad bowl and sprinkle generously with salt. Let the cabbage sit for at least 20 minutes to release some of its water. In the meantime, peel and halve the onion. Remove the stem end and slice thinly. Macerate with red wine vinegar. Halve, seed, and slice the peppers.

  2. Roughly chop the cilantro. Both leaves and stems are delicious, but trim any woody ends the stems might have before chopping. When the cabbage has released a good amount of water, drain it, then add the onion (but not the vinegar), cilantro, and appropriate amount of peppers for your liking. Dress with olive oil. Now comes my favorite part: layering the acids. You’ve already introduced some acid with the macerated red onion, and vinegar is a sort of heavier form of acid, so try to balance it out with lime and lemon juice. Probably the entire lime and half the lemon is a good amount to start with.

  3. Taste, adjust salt and oil if needed. Then, start to tinker with the acids. Does it need more vinegar? More lemon? Taste and adjust, taste and adjust, taste and adjust!

3. Swiss Chard Tzatziki

Ingredients
  • 1 cup green or red Swiss chard, stemmed and finely chopped
  • ½ a cucumber, grated
  • 1 garlic clove, minced
  • ¼ teaspoon coarse salt
  • 1 cup low-fat Greek yogurt
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • ⅛ teaspoon cayenne pepper
  • 2 whole-wheat pitas, cut into wedges and toasted
Directions
  1. Prepare an ice bath; set aside. Bring a large saucepan of water to a boil. Add chard; cook until just tender, 3 to 5 minutes. Drain. Immediately plunge into ice bath to stop the cooking. Drain.
  2. Mince garlic. Grate the cucumber with a fine cheese grater.
  3. Stir chard, cucumber, yogurt, garlic, oil, lemon juice, and cayenne pepper in a medium bowl. Serve with pita wedges.

4. Simple Caesar Salad

Ingredients
  • 1/2 cup mayonnaise
  • 2 tsp Dijon mustard
  • 2 tsp Worcestershire sauce, *
  • 2 garlic cloves, grated or pressed
  • 3 Tbsp fresh lemon juice, from 1 large lemon
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup extra light olive oil, not extra virgin*
  • 1/2 cup freshly grated parmesan cheese
  • 1 head of lettuce, chopped
Instructions
  1. Rinse, drain, and chop the head lettuce into bite sized chunks.
  2. In a large mixing bowl, combine 1/2 cup mayonnaise, 2 tsp Dijon mustard, 2 tsp Worcestershire sauce, grated garlic, 3 Tbs lemon juice, salt, and pepper, and whisk to combine.
  3. While whisking vigorously*, slowly drizzle in 1/2 cup olive oil. Once all of the olive oil is in, continue whisking until it’s well incorporated. Add parmesan and whisk together to combine.
  4. Transfer to a mason jar and dress the lettuce. Garnish with croutons and toppings of choice.
